Donald Russell’s Rump Steak Recipe

This week we have a little helping hand with our food and wine match. We turned to Britain’s leading mail order and online meat supplier, who also hold a Royal Warrant to supply Her Majesty The Queen. Who better to produce a fine recipe to match with one of our delicious wines. Donald Russell source their beef, pork and lamb from farms here in the UK, and their master butchers only deliver the finest cuts from the finest meats.

Marinated Rump Medallions with Apple, Asparagus and Mint Salad

Serves 4

8 Rump Medallions

1 tsp Ground Paprika (smoked)

½ tsp Ground Cumin

2 Cloves of Garlic (crushed)

2 tbsp Olive Oil

For the Apple, Asparagus and Mint Salad:

2-3 tbsp Walnut Oil

1 tbsp Sherry Vinegar

1 tsp Mustard e.g. Dijon

1 pinch Sugar

2 firm Apples e.g. Granny Smith /Gala (cored and cut

into thin slices)

200g Asparagus (blanched and cut into bite sized pieces)

10-16 Fresh Mint leaves

 Method

Mix paprika, cumin, garlic and olive oil and brush the meat with the mixture all over. Leave to marinade in the fridge, covered with foil, for a minimum of 30 minutes.

Before cooking allow the meat to come to room temperature and pat dry with kitchen paper. Heat a large frying pan to the highest setting and cook the meat to your liking (see table below) remove from the pan, cover with foil and leave to rest in a warm place.

For the salad, combine the walnut oil, vinegar and mustard in a large bowl.  Add all the remaining ingredients and mix carefully; season to taste with salt and pepper.  To serve,

divide the salad between plates and place the medallions on top.

Serve with sweet potatoes, or some fresh crusty bread.

The times given here are a guide only and refer to a steak that is approximately 2½ cm or 1″ thick. Thicker steaks may require a longer cooking time and vice versa for thinner steaks.

There’s a lovely juiciness to the fruit of this Crianza from Finca Manzanos that will match up perfectly to the marinated medallions and the freshness of the overall palate won’t overpower the lovely salad. Open half hour or so before serving to allow the wine a little time to open up and show at its best.
