It’s Friday so I’m back with another Wine of the Week.
This week I’ve decide to focus on a white wine from South Africa’s Cape. A tiny production, this wine is put together from very carefully selected parcels of grapes from growers who show almost unnatural levels of dedication in the vineyard. The aim is to produce grapes that are perfectly balanced, expressing fabulous intensity and purity.
Pax Verbatim Rockwater Fountain Viognier is a wine that can only be described as vineyard selection at its finest. Total production is just 400 cases and the cepage is 100% Viognier. The parcels once harvested are transported to a boutique winery in Stellenbosch where the fermentation and maturation is taken care of by winemaker Richard Hilton. His dedication to the process of fruit selection is amazing and his efforts are ultimately rewarded in bottle – a truly unique wine of the highest quality.
Viognier was tipped by many in the wine trade to be the next big thing some 5 years ago but has never quite reached the forecasted dizzy heights; I personally think this is because many examples can be too much for the many wine drinkers. White wines that have incredible density on the palate and ‘full-on’ stone fruit aromatics that can be very heady.
So what’s it like? It’s from the 2009 vintage so there’s a little welcome bottle age, the effects have rounded things off nicely. Just 5% of the overall blend sees a little time in French oak, adding additional roundness and complexity to this a medium bodied Viognier. Luscious aromas of white peach and orange blossom lead to a palate that combines soft fruit textures whist retaining a gentleness that keeps it from overpowering your senses. It still has plenty of richness and wonderful vibrancy with a fresh and deliciously lingering aftertaste. An excellent partner to seafood dishes and is fantastic alongside chicken and turkey dishes.
